Black Salsify (Scorzonera hispanica), also known as Scorzonera and Black Oyster Plant, is a relative of the parsnip. Scorzonera and salsify were very popular in the Victorian era, but dropped off in popularity over the past century or so. To the contrary though, the root is still considered a delicacy by many and can easily be grown from seed.
